5-Minute Gourmet Peppercorn Aioli

A versatile staple from the Casa Flake test kitchen.

This isn't just mayonnaise with pepper thrown in. By combining fresh garlic, bright lemon, and the multi-layered heat of Casa Flake Gourmet Peppercorn Mix, you create a sauce that elevates everything from sandwiches to seafood. The mix of black, white, green, and pink peppercorns adds a visual appeal and flavor complexity you can't get from standard black pepper.

Ingredients

  • 1 cup high-quality mayonnaise (Duke's or Hellmann's/Best Foods recommended)
  • 2 cloves fresh garlic, finely minced or grated (grating creates a stronger flavor)
  • 1 tsp Casa Flake Gourmet Peppercorn Mix, freshly cracked (coarse grind)
  • 1 tbsp fresh lemon juice (approx. half a lemon)
  • 1 tbsp extra virgin olive oil
  • Pinch of sea salt (to taste)

Instructions

  1. Step 1: Prep the Garlic. Mince your garlic as fine as possible, or use a microplane to grate it directly into the bowl. This ensures the garlic flavor is evenly distributed without big chunks.
  2. Step 2: Crack the Pepper. Set your grinder to a coarse setting. You want visible colorful specks of the Gourmet Peppercorn Mix for those bursts of complex heat.
  3. Step 3: Whisk. In a small mixing bowl, combine the mayonnaise, garlic, cracked peppercorns, lemon juice, and olive oil. Whisk briskly until the oil is fully emulsified and the sauce is glossy.
  4. Step 4: Taste and Adjust. Dip a pinky in. Need more zing? Add a squeeze more lemon. Want more heat? Crack more peppercorns.
  5. Step 5: Rest (Optional but Recommended). If you have time, cover and refrigerate for 30 minutes before serving to let the flavors meld.

👨🍳 Casa Flake Pro-Tip

Why the mix matters: Black pepper provides bite, white pepper provides heat, and green/pink peppercorns add earthy and fruity notes. Using the Gourmet Peppercorn Mix gives this simple sauce a "restaurant-quality" depth that single-varietal pepper can't match.
