Spicy Chili Ramen (Three Heat Levels)
Homemade spicy ramen with a premium chili flake tare — built in 25 minutes, with flavor that takes all day to achieve with standard seasonings. Choose your heat level.
Ingredients
The Chili Tare (Flavor Base)
- 3 tablespoons sesame oil (toasted)
- Your chosen chili flakes:
— Smoky: ½ tsp Wild Ember
— Mild: 1 tsp Fuego Dulce
— Hot: ¼ tsp Blazing Roots - 3 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 3 tablespoons soy sauce (or tamari for gluten-free)
- 1 tablespoon miso paste (white or red)
The Broth & Toppings
- 4 cups good chicken or pork stock (or dashi)
- 2 servings ramen noodles (fresh or dried)
- 2 soft-boiled eggs, halved
- 2 portions of protein: chashu pork, chicken thigh, or firm tofu
- Toppings: sliced green onions, sesame seeds, nori, bamboo shoots
Instructions
Step 1: Build the Chili Tare
Heat sesame oil in a small saucepan over medium-low. Add garlic and ginger, cook 2 minutes until fragrant — don't brown. Add chili flakes, stir 30-45 seconds until oil deepens in color. Add soy sauce and miso, stir to combine. Remove from heat. Divide tare between two bowls (about 2-3 tablespoons each).

Bring stock to a gentle simmer in a saucepan. Don't boil — vigorous boiling makes the broth cloudy and harsh. Taste and adjust with soy sauce if needed.
Step 3: Cook the Noodles
Cook ramen noodles per package instructions in a separate pot of boiling water (not in the broth — it makes the broth starchy). Drain and rinse briefly with cold water to stop cooking, then divide between the two bowls of tare.
Step 4: Assemble
Pour hot broth over noodles and tare in each bowl. The broth activates the tare — stir gently to combine. Add toppings: eggs, protein, green onion, sesame seeds, nori. Finish with a drizzle of extra sesame oil and another pinch of chili flakes for visual heat signal.
Serve immediately — ramen waits for no one.
